Is it possible to have something antiinflammatory, sugar-, gluten- and dairy free for your cosy Christmas conversations with family and friends without having to go for water? 

We have your Sunday savior right here. This recipe was curated from our founder when she got the autoimmune hashimotos and went from strict antiinflammatory protocol, AIP, to start inviting some treats again and wanted to have something for the Swedish 'fika' gatherings for Christmas. 

To keep it as antiinflammatory as possible it's free from oats, grains and nuts, yet it's nuts.

For those who crave a sweet Christmas without necessarily eating sweets. 

Remember that eggs differs in size and ovens differs to - be intuitive and also let it be a little 'un-baked' when done. It will after bake if you don't dive into it all before then. 

RECIPE ANTINFLAMMATORY SAFFRON CAKE:

Ingredients

5 eggs 

2 ripe bananas 

3 tbs cold pressed coconut oil 

5 tbs coconut flour (it's replacable for almond flour but you need more almond flour)

1,5 g saffron 

TIPS
Saffron can be changed to ginger bread herbs. 

HOW TO DO IT? 
Mix everything until smooth. Place oven paper in a bred pan. 
Place in the middle of oven, 175 degrees for 20-30 minutes (depending on oven, shall not be totally done). Lift oven paper from bread pan and let it cool down directly to make it perfect. 

Serve as it is or with almond butter.
